This is one of those meals I throw together when I want something filling without following a recipe too closely. It's inspired by the comforting rice-and-omelette dishes you'll find across Asia, but I make mine with seasoned ground beef, sautéed peppers, and melted American cheese tucked inside the eggs. Served over warm rice, it's hearty, affordable, and perfect for using up ingredients already sitting in the fridge.

Note: You'll likely have leftover ground beef, cheese, and rice, making this an easy meal to recreate later in the week.


Instructions

Cook the Rice

Prepare the rice according to the package directions or use leftover rice if you have some on hand.

Keep warm while preparing the omelettes.


Cook the Filling

Dice the bell pepper into small pieces.

Heat a drizzle of oil in a skillet over medium-high heat.

Add the ground beef and cook until browned, breaking it apart with a spoon.

Stir in the diced peppers and cook for another 3–4 minutes until softened.

Season with salt and black pepper.

Transfer the filling to a bowl and wipe out the skillet if needed.


Make the Omelette

Beat two eggs in a bowl until smooth.

Heat the skillet over medium heat with a small amount of oil.

Pour in the eggs, gently swirling the pan to create an even layer.

Once the eggs are mostly set but still slightly glossy, place half of the ground beef mixture on one side of the omelette.

Top with one slice of American cheese.

Fold the omelette over the filling and cook for another minute until the cheese melts.

Repeat with the remaining eggs, filling, and cheese.


Assemble

Divide the warm rice between two plates.

Place one omelette over each serving of rice.

Serve immediately while the cheese is still melted and the omelette is fluffy.

Final Thoughts

The fluffy eggs, savory ground beef, sweet peppers, and gooey American cheese come together into an omelette that's rich without feeling heavy, while the rice turns it into a complete meal. It's quick enough for a weeknight dinner, filling enough to keep you satisfied, and another reminder that some of the best meals come from everyday ingredients you already have on hand.
